My fam loves this healthy spin on a classic recipe! It’s so good, quick, and easy! We almost always have the ingredients on hand to make this too, so it’s perfect for those nights when it’s almost 5pm and you just don’t know what to cook for dinner! Most importantly, my kids love it too!

Chicken Cauliflower Fried Rice

  • 1 lb. chicken breast
  • 1 tbsp. Lawry's seasoned salt
  • 3 tbsp. sesame oil
  • 2 pkgs. cauliflower rice medly
  • 2 egs
  • 4-5 tbsp. soy sauce or liquid aminos
  • 1 tbsp. sesame seeds
  • Sauteed jalapenos, for topping, optional


  • Chop chicken into bite size pieces.
  • Season with Lawry’s seasoned salt or the seasonings of your choice.
  • Add cooking spray to the bottom of your pan, and sauté the chicken on medium to high heat until it is cooked through and the edges are browned (approximately 10 minutes).
  • While chicken is cooking, in another pan, add about 2 tablespoons of sesame oil & sauté cauliflower rice medley on medium heat for about 15 min or until lightly browned.
  • Add 2 eggs to the rice, and scramble.
  • Turn heat down to medium low, and add cooked chicken to the rice mixture and stir all together.
  • Add another tablespoon of sesame oil and about 4-5 tablespoons of soy sauce or liquid aminos.
  • Top with sesame seeds, and mix all together for another 2 minutes.
  • Serve as is, or with sautéed jalapeños for a kick!!
