This recipe is super easy to modify to please your whole family! You can use any vegetables that you want, and it can be made with any type of sausage, including plant-based. You can also do the prep work early so all you have to do at dinner time is throw it on the pan and in the oven!

Easy Sheet Pan Dinner

Cook Time 50 minutes

Ingredients
  

  • 3 lbs. potatoes
  • 4-6 tbsp. olive oil
  • Salt & pepper
  • 4 tsp. Italian seasoning
  • 7-8 c. veggies of choice
  • 8 links sausage of choice fully cooked

Instructions
 

  • Cut potatoes into ½ – 1 inch pieces. **Optional: For crispier potatoes, place cut potatoes in ice water and refrigerate until you are ready to cook. Drain and dry potatoes before cooking.
  • Preheat the oven to 400 degrees, and line two large sheet pans with parchment paper or aluminum foil.
  • Place potatoes in a large mixing bowl. Add about 2-3 tablespoons of olive oil, and stir to coat.
  • Spread potatoes evenly in a single layer on one sheet pan. Season with 2 tsp. garlic powder, 3 tsp. Italian seasoning, salt, and pepper
  • Roast potatoes for about 30 minutes.
  • While the potatoes cook, chop the veggies and place in the same bowl that the potatoes were in. Add about 2-3 tablespoons of olive oil, and stir to coat. Season with 1 tsp. Garlic powder, 1  tsp. Italian seasoning, salt, and pepper.
  • Slice the sausage into ¼-½ inch pieces.
  • Spread the veggies and sausage on the other sheet pan.
  • Remove the potatoes from the oven and flip them over so they don’t burn.
