When I share a recipe you know it’s going to be easy & pretty much foolproof! I’m not a chef or really a person who enjoys cooking by any means, but I do it because well, we gotta eat! And this chicken tortilla soup recipe is one that pretty much cooks itself but tastes like it’s restaurant quality! Haha okay, maybe not that impressive but whenever I make it, my girls tell me I should be a chef at a restaurant! Six and eight year olds are the best!!!

This chicken tortilla soup really is one of our family favorites! Chad, my husband, who doesn’t like soup at all, will eat seconds of this!!! The best part is, it’s pretty much just dumping everything in the crockpot and letting it do its thing without having to do a ton of prep work or chopping!

I normally throw this in the crockpot in the morning & set on low that way it’s ready to eat for dinner time!!! I’ve even thrown it in there in the early afternoon on high for 4 hours and it’s still just as good!! It’s the perfect meal for guests too! We’ll have family over and I just double the recipe and it cooks up just as yummy! This meal really can feed a lot, for a little bit of money & time!!! That’s a win in my (recipe) book!!!

Easiest Chicken Tortilla Soup Recipe You’ll Ever Make

Ingredients
  

  • 2-3 boneless, skinless chicken breasts
  • 1-2 cans pinto beans (sometimes I add 2 to make it a bit more hearty)
  • 1 can black beans
  • 1 can corn
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 carton chicken broth (use as you go depending on how "brothy" you like your soup. I usually end up using 3/4 of a carton)
  • Optional Toppings: Cilantro, avocado, shredded cheese, crushed tortilla chips or tortilla strips, plain Greek yogurt or sour cream, fresh limes

Instructions
 

  • Drain each can of beans, corn & diced tomatoes.
  • Pour each can into the crockpot, then place the chicken breasts on top. (This makes it easier to pull the chicken out to shred once cooked).
  • Add about 3/4 carton of chicken broth. (You can continue to add more as it cooks if you like a more brothy soup).
  • Sprinkle 1 packet of taco seasoning on top. Put on crockpot lid.
  • Cook on high for 4 hours or on low for 8 hours.
  • Once chicken is cooked through, take it out & shred it. It should easily fall apart at this point & I usually do this using two forks.
  • Place shredded chicken back into crockpot and give the soup a good stir.
  • Now it’s time to serve into bowls & top with toppings! You can really use any toppings for this, but our favorites are plain Greek yogurt in place of sour cream, shredded cheese, cilantro, avocado & tortilla chips!!! Fresh lime is also amazing to squeeze on top!!
